cinnamon oatmeal

ingredients: 1/2 cup oats, 1 tsp cinnamon, 1 cup milk, 1 tbsp honey, 1 banana

instructions: cook oats in milk for 5 minutes, stir in cinnamon and honey, top with banana slices

i eat oatmeal every morning before school: you can either cook it in milk or water but it tastes a lot creamier with milk

pho stew

ingredients: 8 oz rice noodles, 4 cups beef broth, 3 cloves garlic, 1 inch ginger, 2 star anise, 8 oz beef slices, fresh herbs

instructions: simmer broth with spices for 30 minutes, cook noodles for 5 minutes, add beef for 2 minutes, combine and serve with herbs

this is a little tough to write because i have been craving pho for a while!

spicy turkish egg

ingredients: 2 eggs, 1/2 cup yogurt, 1 clove garlic, 2 tbsp chili oil, 1 tbsp butter, 1 tsp paprika, fresh dill

instructions: poach eggs for 3-4 minutes, mix yogurt with minced garlic, top with eggs and drizzle chili butter, garnish with dill

my dad usually makes this for me, and i always sneak in extra chili oil! he thinks its too salty

miso soup

ingredients: 2 tbsp miso paste, 4 oz tofu, 1/4 cup seaweed, 2 green onions, 3 cups dashi broth

instructions: heat dashi for 5 minutes, stir in miso paste, add cubed tofu and seaweed, simmer 3 minutes, top with sliced green onion

miso soup is great as an appetizer, tbh i usually use a packet so i had to research this

avocado toast

ingredients: 2 slices bread, 1 avocado, 1 tbsp lemon juice, 1/4 tsp chili flakes, 1/4 tsp salt

instructions: toast bread for 3 minutes, mash avocado with lemon and salt, spread on toast and sprinkle chili flakes

avocado toast is very popular online for some reason! just kidding there is a reason. it is very good!

shakshuka

ingredients: 4 eggs, 2 cups diced tomato, 1 onion, 3 cloves garlic, 1 tsp paprika, 1 tsp cumin

instructions: cook onion and garlic for 5 minutes, add spices and tomato, simmer 10 minutes, crack eggs on top, cover and cook 8 minutes until set

i am a tatte hater - why does it have a french aesthetic if its mediterranean food? - but i do love tatte shakshuka

bibimbap

ingredients: 2 cups cooked rice, 2 cups mixed vegetables, 6 oz beef, 1 egg, 2 tbsp gochujang

instructions: cook ingredients separately (vegetables 5 min, beef 7 min), layer over rice, fry egg for 3 minutes, top with egg and gochujang

i love bibimbap but i hate mixing it - i like to eat each ingredient separately

pesto pasta

ingredients: 8 oz pasta, 2 cups basil, 3 cloves garlic, 1/2 cup olive oil, 1/4 cup pine nuts, 1/2 cup parmesan

instructions: blend basil, garlic, nuts, oil, cheese into pesto for 1 minute, toss with pasta cooked for 10 minutes

i usually use walnuts instead of pine nuts because they are cheaper and i dont really taste a difference

lentil soup

ingredients: 1 cup lentils, 2 carrots, 2 celery stalks, 1 onion, 1 can tomato, 1 tsp cumin, 6 cups water

instructions: sauté veggies for 5 minutes, add spices and lentils, cover with water, simmer 30 minutes until soft

this is slightly different than the daal my mom makes (hers is better but idk the recipe)

chickpea salad

ingredients: 2 cups chickpeas, 1 cucumber, 2 tomatoes, 1/4 red onion, 2 tbsp lemon juice, 3 tbsp olive oil

instructions: mix all chopped ingredients with lemon juice and olive oil

plain chickpeas do not compare to hummus. but this salad does

banana pancakes

ingredients: 2 bananas, 2 eggs, 1/2 cup oats, 1/2 tsp cinnamon

instructions: blend all ingredients for 30 seconds, cook on skillet 3 minutes per side until golden

these pancakes are a great healthy alternative to traditional ones

green smoothie

ingredients: 2 cups spinach, 1 banana, 1 apple, 1 cup almond milk

instructions: blend all ingredients for 1 minute until smooth

very suspicious name! not a suspicious taste...

garlic noodles

ingredients: 8 oz noodles, 4 cloves garlic, 3 tbsp soy sauce, 2 tbsp butter, 2 green onions

instructions: cook noodles for 8 minutes, sauté minced garlic in butter for 2 minutes, add soy sauce, toss noodles, top with sliced green onion

i love garlic so much that i sometimes add extra cloves

tofu stir fry

ingredients: 14 oz tofu, 2 cups broccoli, 1 bell pepper, 3 tbsp soy sauce, 2 cloves garlic, 1 tbsp sesame oil

instructions: sauté cubed tofu for 5 minutes until golden, add vegetables and sauce, stir fry 7 minutes until tender

i usually press the tofu for 30 minutes before cooking to get rid of excess water

butter chicken

ingredients: 1 lb chicken, 2 cups diced tomato, 1/2 cup cream, 4 tbsp butter, 2 tsp garam masala, 3 cloves garlic, 1 inch ginger

instructions: cook chicken in spices for 10 minutes, simmer in omato and cream for 20 minutes, finish with butter

i usually make this with rice and naan on the side

quinoa bowl

ingredients: 1 cup quinoa, 3 cups mixed roasted vegetables, 1 cup chickpeas, 1/4 cup tahini sauce, 2 cups water

instructions: cook quinoa in water for 15 minutes, roast vegetables at 400°f for 25 minutes, assemble with sauce on top

i like to use whatever vegetables i have in the fridge for this recipe

creamy mushroom pasta

ingredients: 8 oz pasta, 2 cups sliced mushrooms, 3 cloves garlic, 1 cup cream, 1/2 cup parmesan, 1 tsp thyme

instructions: sauté mushrooms and garlic for 5 minutes, add cream and cheese, simmer 5 minutes, mix with pasta cooked 10 minutes

i love mushrooms so much that i sometimes add extra

thai green curry

ingredients: 3 tbsp green curry paste, 1 can (14 oz) coconut milk, 1 lb chicken or tofu, 2 cups mixed vegetables, 1/4 cup basil

instructions: cook paste in 1 tbsp oil for 2 minutes, add coconut milk and protein, simmer with vegetables for 15 minutes

i usually serve this with jasmine rice

black bean tacos

ingredients: 2 cups black beans, 8 corn tortillas, 1 avocado, 1/2 cup salsa, 1 lime

instructions: warm beans for 5 minutes and tortillas for 30 seconds each, fill and top with sliced avocado and salsa

i love adding a squeeze of lime juice on top for extra flavor

eggs benedict

ingredients: 2 english muffins, 4 eggs, 4 slices ham, 1 cup hollandaise sauce

instructions: poach eggs for 4 minutes, toast muffins for 3 minutes, assemble with ham and sauce on top

sweet potato fries

ingredients: 2 large sweet potatoes, 2 tbsp olive oil, 1 tsp salt, 1 tsp paprika

instructions: slice potatoes into sticks, toss in oil and spices, bake at 425°f for 25-30 minutes until crisp

i usually make these as a side for dinner

zucchini fritters

ingredients: 2 zucchini, 1 egg, 1/4 cup flour, 2 cloves garlic, 2 green onions

instructions: grate zucchini, squeeze out moisture, mix with ingredients, pan fry in 2 tbsp oil for 3 minutes per side

these are a great way to use up extra zucchini (jk who has extra zucchini?) nerd.

stuffed peppers

ingredients: 4 bell peppers, 1 cup cooked rice, 1 lb ground beef, 1 cup tomato sauce, 1 diced onion

instructions: mix filling, stuff into halved peppers, bake at 375°f for 35-40 minutes until soft

i usually top with cheese and bake for an extra 5 minutes

french toast

ingredients: 4 slices bread, 2 eggs, 1/4 cup milk, 1/2 tsp cinnamon, maple syrup

instructions: dip bread in whisked egg mix, fry in butter for 3 minutes per side until golden, serve with syrup

so so sweet!!!!!!!!!!!!!!!!!!!!!!

greek salad

ingredients: 3 tomatoes, 1 cucumber, 1/4 red onion, 4 oz feta, 1/2 cup olives, 3 tbsp olive oil

instructions: chop ingredients, toss with olive oil and 1 tsp oregano

i usually add a little more feta because i love cheese

falafel wrap

ingredients: 6 falafel balls, 2 pita breads, 1 tomato, 1 cup lettuce, 1/4 cup tahini sauce

instructions: warm pita for 30 seconds, add fillings, drizzle 2 tbsp sauce and wrap

i usually make my own falafel but i used store-bought for this recipe

soba noodle salad

ingredients: 8 oz soba noodles, 1 carrot, 1 cucumber, 2 tbsp sesame seeds, 3 tbsp soy sauce, 1 tbsp sesame oil

instructions: cook noodles for 5 minutes, rinse with cold water, toss with julienned veggies and dressing

i love the texture of soba noodles - they are a little chewy

breakfast burrito

ingredients: 2 large tortillas, 4 eggs, 1/2 cup shredded cheese, 1/2 cup beans, 1/4 cup salsa

instructions: scramble eggs for 3 minutes, fill tortilla with all ingredients, roll up tightly

i usually add avocado slices for extra creaminess

cauliflower tacos

ingredients: 1 head cauliflower, 8 taco shells, 1 lime, 1 avocado, 1 cup slaw

instructions: roast cauliflower florets at 425°f for 25 minutes, assemble tacos with toppings

i love the crunch of roasted cauliflower in these tacos

chicken fried rice

ingredients: 3 cups cooked rice, 1 lb diced chicken, 2 eggs, 1 cup frozen peas, 3 tbsp soy sauce

instructions: cook chicken for 7 minutes, scramble egg for 2 minutes, stir-fry everything together for 5 minutes

i usually use day-old rice for the best texture

carrot ginger soup

ingredients: 1 lb carrots, 2 inches ginger, 1 onion, 3 cloves garlic, 4 cups broth

instructions: sauté ingredients for 5 minutes, simmer in broth for 20 minutes, blend until smooth

i love the warmth of ginger in this soup

mango lassi

ingredients: 1 cup mango chunks, 1 cup yogurt, 1/2 cup milk, 2 tbsp honey, 1/4 tsp cardamom

instructions: blend all ingredients for 1 minute until smooth

this is a refreshing drink, especially in the summer

rice paper rolls

ingredients: 8 rice paper sheets, 12 shrimp, 2 cups lettuce, 4 oz vermicelli, fresh herbs

instructions: soak paper in warm water for 10 seconds, fill with ingredients, roll tightly

i usually serve these with a peanut dipping sauce

pumpkin pasta

ingredients: 8 oz pasta, 1 cup pumpkin puree, 1/2 cup cream, 2 cloves garlic, 6 sage leaves

instructions: make sauce from puree and cream, simmer 5 minutes, toss with pasta cooked 10 minutes

no it tastes a whole lot better than it sounds (even if it sounds good to you, it tastes even better)

turmeric rice

ingredients: 1 cup rice, 1 tsp turmeric, 2 cloves garlic, 1/2 onion, 2 cups broth

instructions: sauté onion and garlic for 3 minutes, add turmeric and rice, cook in broth for 18 minutes

i love the color of turmeric rice - it makes any meal look fancy

chocolate mug cake

ingredients: 4 tbsp flour, 2 tbsp cocoa, 3 tbsp sugar, 3 tbsp milk, 2 tbsp oil, 1/4 tsp baking powder

instructions: mix all in mug, microwave on high for 90 seconds

this is a great quick dessert when you need a chocolate fix

spinach pie

ingredients: 1 lb spinach, 8 oz feta, 10 phyllo sheets, 2 eggs, 1 diced onion, 1/4 cup melted butter

instructions: mix filling, layer in buttered phyllo, bake at 375°f for 40 minutes until golden

this is a great vegetarian option for parties

beet hummus

ingredients: 2 roasted beets, 1 can (15 oz) chickpeas, 1/4 cup tahini, 2 tbsp lemon juice, 2 cloves garlic

instructions: roast beets at 400°f for 45 minutes, blend all ingredients for 2 minutes until smooth

the color of this hummus makes it perfect for entertaining - friends, family, yourself (nerd).

apple crisp

ingredients: 4 apples, 1 cup oats, 1 tsp cinnamon, 1/2 cup sugar, 1/4 cup melted butter

instructions: layer sliced apples in baking dish, top with oat mixture, bake at 350°f for 35 minutes until golden

i usually serve this with a scoop of vanilla ice cream

kale chips

ingredients: 1 bunch kale, 1 tbsp olive oil, 1/2 tsp salt

instructions: tear kale into pieces, toss in oil and salt, bake at 300°f for 20 minutes until crisp

these are a great healthy snack alternative to regular chips. i hate kale but i like these

beef stroganoff

ingredients: 1 lb beef, 2 cups sliced mushrooms, 1 onion, 1 cup sour cream, 2 tbsp butter, 2 tbsp flour

instructions: cook beef and onion for 8 minutes, add mushrooms for 5 minutes, make sauce, stir in sour cream, simmer 10 minutes, serve with noodles

stroganovs of russia anyone? but this is beef so stop you cannibal.

pad thai

i usually add extra lime juice for more tanginess

ratatouille

ingredients: 1 eggplant, 2 zucchini, 2 bell peppers, 4 tomatoes, 1 onion, 4 cloves garlic, herbs

instructions: slice vegetables, layer or mix, bake at 375°f for 45 minutes or simmer 30 minutes until tender

instructions: roast beets at 400°f for 50 minutes, slice, combine with cheese, nuts and dressing

lamb korma

ingredients: 1.5 lb lamb, 1 cup yogurt, 1/2 cup ground almonds, 2 tbsp garam masala, 1 onion, 4 cloves garlic, 1 inch ginger

instructions: brown lamb for 8 minutes, cook onion and spices 5 minutes, add yogurt and nuts, simmer 40 minutes

i usually serve this with basmati rice and naan

cajun jambalaya

ingredients: 1.5 cups rice, 8 oz sausage, 8 oz chicken, 8 oz shrimp, 1 bell pepper, 2 tomatoes, 2 tbsp cajun spice, 3 cups broth

instructions: sauté meats and veggies for 10 minutes, add rice and liquid, cook 25 minutes until rice is done

i usually add extra cajun spice for more heat. nerd.

lasagna

ingredients: 12 lasagna noodles, 1 lb ground meat, 3 cups tomato sauce, 2 cups ricotta, 2 cups mozzarella, 1 cup parmesan

instructions: layer meat sauce and cheeses between noodles in 9x13 pan, bake at 375°f for 45 minutes until bubbly

i usually let it rest for 10 minutes before serving for easier slicing

sushi rolls

ingredients: 2 cups sushi rice, 4 nori sheets, 8 oz fish or vegetables , 2 tbsp rice vinegar, soy sauce

instructions: cook rice 20 minutes, cool and mix with vinegar, spread on nori, add fillings, roll tightly, slice into 8 pieces

i usually serve with pickled ginger and wasabi on the side

chili con carne

ingredients: 1 lb ground beef, 2 cans (15 oz) beans, 2 cups diced tomato, 1 onion, 2 tbsp chili powder, 3 cloves garlic

instructions: sauté beef and onion for 8 minutes, add beans and spices , simmer 30 minutes until thick

i top with shredded cheese and sour cream

creme brulee

ingredients: 2 cups cream, 1/2 cup sugar (plus 4 tbsp for topping), 5 egg yolks, 1 tsp vanilla

instructions: heat cream to 170°f, whisk with yolks and sugar, bake at 325°f in water bath for 40 minutes, chill 4 hours, caramelize 1 tbsp sugar on top with torch

i make this for special occasions because it takes a while

paella

ingredients: 2 cups rice, 1/4 tsp saffron, 1 lb mixed seafood or chicken, 1 cup peas, 1 bell pepper, 4 cups broth

instructions: sauté ingredients for 5 minutes, add broth and rice, cook without stirring 20 minutes, add seafood, cook 5 more minutes

i use a mix of shrimp, mussels and chicken for this dish

falooda

ingredients: 2 oz vermicelli, 2 cups milk, 1/4 cup rose syrup, 2 tbsp basil seeds, 2 scoops ice cream

instructions: cook vermicelli for 5 minutes, soak basil seeds 10 minutes, prepare milk mix, layer with syrup and seeds, top with ice cream

this is a popular dessert in india and pakistan - i love the floral flavor of rose syrup

gyro plate

ingredients: 1 lb gyro meat, 4 pita breads, 1 cup tzatziki, 2 tomatoes, 1 onion, 2 cups lettuce

instructions: cook meat for 15 minutes, carve into slices, serve on warmed pita with toppings

i usually add extra tzatziki because i love the tangy flavor

tom yum soup

ingredients: 8 oz shrimp or chicken, 2 stalks lemongrass, 2 limes, 2 thai chilies, 1 cup sliced mushrooms, 4 cups broth

instructions: boil broth with aromatics for 10 minutes, add protein and mushrooms, cook 5 minutes, finish with lime juice and chili

tom yum! for real

pancakes

ingredients: 1.5 cups flour, 1 cup milk, 2 eggs, 2 tsp baking powder, 2 tbsp sugar, 2 tbsp melted butter

instructions: mix batter, cook 1/4 cup portions on griddle for 2-3 minutes per side until golden both sides

stuffed mushrooms

ingredients: 12 large mushrooms, 1/2 cup breadcrumbs, 3 cloves garlic, 1/2 cup grated cheese, 2 tbsp herbs

instructions: remove stems, fill caps with mixture, bake at 375°f for 20 minutes until golden

these are a great appetizer for parties

beef tacos

ingredients: 1 lb ground beef, 8 taco shells, 2 cups shredded lettuce, 2 diced tomatoes, 1 cup shredded cheese

instructions: cook beef for 8 minutes with 1 tbsp taco seasoning, warm shells for 1 minute, assemble with toppings

i usually add a dollop of sour cream on top for extra creaminess

spinach lasagna rolls
